What it does is to allow you to double (or in some cases quadruple) your current win. Some game providers allow you to risk half of your win.
Usually you are allowed to either click red or black or in some cases also pick a suite: clubs, diamonds, hearts, or spades.
If you have guessed the red or black card outcome you have just doubled your win, or if you guessed the correct suite, you have quadrupled your win. Some game providers allow you to redouble several times up to no limit, though most will cap this feature after 5-7 successful tries.

What is important for you to know is that the above double up feature have a 0% house edge, and all it does is to increase the variance.

There is also another type of "Double Up" / "Gamble" feature where the dealer shows a face up card and the player have several face down cards to pick from where the player needs to beat the dealer's card by picking a higher rank card. Here are two distinctions which I'll explain:

When both dealer and player card have equal ranks and the result is a tie/push, the house edge is 0% as well, like in the above example.
When both dealer and player card have equal ranks and the result is a dealer win, then the house edge is very close to 3% (reject this bet).
